Catherine Anstrom

Cathy Anstrom joined the faculty of Olivet Nazarene University in the fall of 1995 as an adjunct instructor. In 1999, Cathy accepted the position of director of the ONU dietetic program.

She received her bachelor of science degree in 1978 from Eastern Illinois University, and a master's in business administration at Olivet Nazarene University in 1995.

Professor Anstrom is currently working on a second master's degree in clinical dietetics from Finch University and Chicago Medical School. She has certification as a Registered and Licensed Dietitian (RD/LD) and as a food safety instructor for the State of Illinois.

Cathy is the faculty sponsor for Kappa Omicron Nu the honorary society for Family and Consumer Sciences.
